
Veg Alfredo pasta
Cheesy alfredo pasta to make your days brighter😋
Recipe
Ingredients
• Pasta – 2 cup
• Oil – 1 tsp + 1 tbsp + 1 tbsp
• Butter – 2.5 tbsp
• Maida – 2.5 tbsp
• Milk – 2 cup
• Salt – To taste
• Black pepper powder – 1.5 tsp
• Chilli flakes – 1.5 tsp
• Oregano – 1.5 tsp
• Grated cheese cubes – 4
• Finely chopped garlic – 8 to 9
• Diced onion – 2 small
• Diced capsicum – 1 small
• Diced yellow capsicum – 1/2 medium
• Diced red capsicum – 1/2 medium
• Sweet corn kernels – 1/2 cup
For vegetables
1. Heat 1 tbsp oil in a pan, add garlic and cook until it is golden. Add onions and sautee for 2 minutes
2. Add capsicum, corn and cook for 5 minutes or until the vegetables become soft. Turn off heat and transfer to a bowl
For the pasta
1. Boil 5 cups water. Add salt and 1 tbsp oil. Add pasta and cook for 6-7 minutes or until the pasta is al dente
2. Strain the pasta and pour some cold water on it to prevent it from cooking any further
For the sauce
1. Heat 1 tsp oil in a pan. Add butter and once the butter melts, add maida. Cook the maida until it is slightly golden
2. Add milk gradually in batches (1/2 cup at a time) stirring continuously. Make sure there are no lumps
3. Season the sauce with salt, pepper, chilli flakes, oregano and mix well. Add the cheese and mix well. Cook until the cheese melts and the sauce comes together and thickens a bit
For the alfredo pasta
1. Add the sauteed vegetables to the sauce and mix well. Cook for a minute, add the boiled pasta and mix well
2. Cover cook for 5 minutes on low heat. Adjust the salt and seasonings according to your preferences
Garnish your yummy white sauce pasta with some more cheese and enjoy!
