Ingredients
• Butter – 1/2 cup
• Powdered sugar – 3/4 cup
• Curd – 2 tbsp
• Vanilla essence – 1.5 tsp
• Maida – 1 cup
• Baking powder – 1 tsp
• Baking soda – 1/4 tsp
• Milk powder – 2 tbsp
• Milk – 1/4 cup
Makes 14 mini cupcakes
1. Beat together butter and sugar until it is light and fluffy. Add curd, vanilla essence and beat until everything mixes well
2. Seive together maida, baking powder, baking soda and milk powder
3. Add the dry ingredients to the wet mixture and mix well. Add milk and beat until the batter becomes smooth. Finally fold the mixture using a spatula so that the air remains in the batter
For making colorful cupcakes, divide the batter into separate bowls and add food color, mix well
4. Pour the batter into cupcake moulds. Make sure that you don’t fill the mould more than half. Bake in a pre heated oven at 180 degrees for 12 minutes
Alternatively, you can also bake them in a kadhai. Preheat the kadhai on medium flame for about 10 minutes. Place the cupcakes on a stand in the kadhai and cover cook on low flame for 20-25 minutes
Let the cupcakes cool down before you demould. Decorate with your choice of toppings and enjoy! 🧁😋
