Spinach tomato soup

Super delicious spinach tomato soup with some fresh cream. Spinach is full of nutrients and very rich in iron. The spinach’s natural vibrant color makes the soup look attractive too😋

Recipe

Ingredients
• Spinach – 250 gm (after removing the stem)
• Tomato – 3 medium
• Onion – 1 large
• Green chilies – 2
• Garlic Cloves – 9 to 10 medium
• Salt – To taste
• Black pepper powder – 3/4 tsp
• Rosted cumin powder – 1.5 tsp
• Butter – 2 tbsp
• Milk – 1/2 cup
• Water – 4 cups + 1 cup
• Fresh Cream – 2 tbsp

1. Peel and dice the onion and dice the tomatoes. Roughly chop the spinach leaves, garlic and green chillies

2. Add 4 cups water in a kadhai. Let it come to a boil. Add the onion, tomatoes, garlic and chillies to it. Let these vegetables boil for 15 minutes until they are soft and pulpy

3. Add the spinach leaves and simmer for another 10-12 minutes. Turn off the heat and let the vegetable mixture cool down completely

4. Transfer to a mixer and grind the vegetables to a paste. Strain the paste through a seive in order to get a smooth puree. Make sure there are no lumps

5. Heat butter in a kadhai. Add the vegetable puree, salt, pepper and cumin powder. Mix well and let it cook on low heat for about 10 mins

6. Add milk and mix well. Add water to get the consistency of the soup according to your preference. I added 1 cup of water

7. Adjust the salt and finally add some fresh cream, mix well. Let the soup come to a boil and take it off the heat
