Saffron cardamom barfi

Try this barfi full of flavor and richness of kesar and elaichi 😋

Recipe

Ingredients
• Milk – 1 cup
• Saffron – 1/4 tsp
• Saffron cardamom syrup – 1/4 tsp (OR substitute with 1/4 tsp elaichi powder + 1/4 tsp saffron)
• Ghee – 1/3 cup
• Milk powder – 3 cup
• Cashew powder – 1/3 cup
• Sugar – 1/2 cup
• Yellow food color (Optional)

1. To make the saffron milk, soak the saffron in warm milk for about half an hour

2. Mix together the milk powder and cashew powder in a bowl. Gradually add the saffron milk to this and mix continuously. Make sure there are no lumps or else the texture of the barfi will not be smooth

3. In a pan, add ghee. Add the milk powder mixture to this and mix well. Turn on the gas on low heat and keep stirring the mixture continuously (to avoid forming lumps)

4. Add sugar, saffron cardamom syrup, food color and cook the mixture until it looks glossy and forms a soft dough like consistency and starts to gather in the pan

5. Grease a mould with some ghee. Pour the barfi mixture evenly. Cool it down and let it set for a couple of hours in the fridge
