Sabudana vada

Crispy sabudana vadas, sweet curd and fresh coriander chutney. With a small and healthy twist. These cute little sabudana vadas are not fried! 😍

Recipe

Ingredients
• Soaked sabudana (small) – 2 cups (after soaking it should become 2 cups)
• Boiled potatoes – 6 medium
• Roasted and coarsely grind peanuts – 1 cup
• Finely chopped green chillies – 3 small
• Red chilli powder – 1 tsp
• Salt – To taste
• Finely chopped coriander leaves
• Ghee – 2 tbsp (For greasing appe pan)

Coriander chutney (Optional)
• Coriander leaves – 1/2 bunch
• Green chillies – 3
• Lemon juice – 1 tbsp
• Salt – To taste
• Sugar – 1 tbsp
• Cumin seeds – 1/2 tsp
• Roasted and coarsely grind peanuts – 2.5 tbsp
• Water – 4 tbsp

For the sabudana vada

1. Take the soaked sabudana in a bowl. Mash the potatoes and add to the sabudana. Add green chillies and coriander. Mix well

2. Add salt, red chilli powder and peanuts and mix well. Try to bring the mixture together such that it holds its shape when you try to make balls

3. If the mixture is not coming together, you can add another boiled potato. Make equal sized round balls and flatten them slightly

4. Keep the appe pan on the stove and grease it with some ghee. Place the sabudana vadas in the appe pan and cook them on low to medium flame for about 5-7 minutes

5. Grease the top of your sabudana vadas with some ghee and gently flip them. Cook the other side also for 5-7 minutes or until the vadas are crispy and golden brown

For making the coriander chutney: Mix together all the ingredients and blitz in a mixer for about 2-3 minutes or until the chutney is smooth and glossy

Serve your healthy and crispy sabudana vadas with some cold curd and fresh coriander chutney! 😋
