Poha kurkure

Ingredients
• Poha – 1 cup
• Besan – 1 /4 cup
• Cornflour – 1/4 cup
• Salt – To taste
• Oil – 1/2 tsp
• Kashmiri red chilli powder – 1.25 tsp
• Chaat masala – 1 tsp
• Raw mango powder – 1/4 tsp
1. Grind the poha to a fine powder. Seive together poha powder and besan
2. Take 1 cup water in a pan and add salt to it. Boil the water and once the water starts boiling, lower the flame
3. Gradually add the poha and besan mix to the boiling water and keep mixing continuously using a whisk. Once the mixture starts coming together like a dough, turn of the heat
4. Let the dough cool down a bit for about 7-8 minutes. Knead the dough while it is still warm for 5-10 minutes
5. Gradually add the cornflour to the dough and keep kneading it so that the dough stiffens and comes together. Add oil and knead to get a smooth dough
6. Take very small portions of the dough and roll into the shape of kurkure. Heat oil in a kadhai and deep fry the kurkure on medium heat for 8-10 minutes or until they’re crispy and golden brown
Make sure you cover the kadhai with a lid while frying the kurkure or else the oil might splatter when they pop
7. In a bowl, mix together the dry masala. Add the fried kurkure to this and toss well so that they’re evenly coated with this masala
