Palak paneer

Recipe

Ingredients
• Oil – 2 tbsp
• Butter – 1 tbsp
• Diced paneer – 500 gm
• Spinach – 500 gm
• Garlic cloves – 7 to 8
• Cumin seeds – 1 tsp
• Finely chopped green chillies – 2 big
• Finely chopped onions – 3 medium
• Ginger garlic paste – 1 tsp
• Finely chopped tomatoes – 4 medium
• Turmeric powder – 1/2 tsp
• Red chilli powder – 1 tsp
• Coriander powder – 2 tsp
• Garam masala – 1 tsp
• Salt – To taste
• Fresh cream – 1 tbsp
• Fresh coriander leaves

1. Heat oil in a kadhai. Add green chillies and sauté them for 30 seconds. Add cumin seeds and let them crackle

2. Add onions and sauté until they are brown. Add the ginger garlic paste and cook for 2 minutes. Add tomatoes and cook until they are soft and pulpy

3. Add all the dry spices, salt and cook the mixture on low flame until oil separates. Turn off the heat and let the mixture cool down at room temperature

4. In a big pot, boil 10 water and add spinach leaves and garlic cloves to it and cook for 10-12 minutes. Strain and transfer to a plate so that it cools down a bit

5. Transfer these spinach leaves and garlic along with the onion tomato mixture to a blender and blend to make a paste. Add 1/4 cup of water and blend again to get a smooth puree

4. Heat 1 tbsp butter in the kadhai and pour the spinach onion tomato puree into it. Cook on low flame for 10 minutes

5. Add the paneer cubes along with 1 cup of water and mix well. Cover cook on low flame for another 5 minutes or until the gravy thickens a bit

6. Add water if required and cover cook for 2-3 minutes on low to medium flame. Add fresh cream and mix well

Garnish your palak paneer with some fresh cream and serve hot with steamed rice or a side of your choice! 😋
