Nan khatai

Good old nan khatai, the classic indian shortbread biscuit! This is my grandmother’s recipe and is really close to my heart. It is full of love ❤ and always works like magic 💫

Recipe

Ingredients
• Maida – 2.5 cup
• Besan – 90 gm OR 3/4 of 1/2 cup (1/2 cup ~ 120 ml)
• Baking powder – 3/4 tsp
• Powdered sugar – 1 cup
• Ghee – 1.25 cup
• Vanilla essence – 1/2 tsp

1. In a bowl, beat ghee and sugar until it is light and fluffy. Add vanilla essence and mix well

2. Seive together maida, besan and baking powder (Dry mixture)

3. Fold the dry mixture into the wet mixture using a spatula and mix well to form a dough like consistency. You can add little more ghee if the dough is not holding well

4. Make equal sized round balls and flatten them slightly. Bake in pre heated oven at 180 degrees for 12 mins. Bake for another 2-3 mins if required (May vary from oven to oven)
