Mushroom tikka masala

Jazz up those cute little mushrooms by giving them an Indian twist! Try cooking this mushroom tikka masala 🍄

Recipe

Ingredients
For marination
• Mushrooms – 300 gm
• Hung curd – 5 tbsp
• Ginger garlic paste – 2 tsp
• Turmeric powder- 1/4 tsp
• Kashmiri red chilli powder- 2 tsp
• Coriander powder – 1 tsp
• Salt – To taste
• Mustard oil – 1.5 tsp
• Butter – 2 tbsp

For gravy
• Oil – 2 tbsp
• Garlic cloves – 5
• Green chillies – 2 small
• Chopped onions – 5 medium
• Chopped tomatoes – 3 medium
• Turmeric powder – 1/2 tsp
• Red chilli powder – 1 tsp
• Coriander powder – 2 tsp
• Garam masala – 1/2 tsp
• Salt – To taste
• Fresh coriander leaves

For marinating the mushrooms

1. Clean the mushrooms properly and dice them

2. Take the hung curd in a bowl and add ginger garlic paste, dry spices, salt and mix well

3. Add mustard oil and mix well. To this marinade, add the mushrooms and mix so that they are evenly marinated

4. Keep the marinated mushrooms in the fridge and let them rest for about an hour

For the gravy

1. Heat oil in a kadhai and add garlic cloves. Cook for a minute and add green chillies, sauté well. Add cumin seeds

2. Once the cumin seeds crackle, add onions and sauté until they are brown. Add tomatoes and cook until they are soft

3. Add all the dry spices, salt and cook the mixture well until the oil separates

4. Let the onion-tomato mixture cool down and grind it well into a smooth paste

For the mushroom tikka masala

1. Heat 1 tsp oil in a pan and add butter to it. Add the marinated mushrooms and cook for 10 minutes. Take the mushrooms off heat and transfer to a bowl

2. In the same kadhai, pour the onion-tomato paste and let it cook for 8-10 minutes or until the oil separates

3. Add the mushrooms and cook for 5 minutes on low-medium heat. Add water to get desired consistency of the gravy

4. Adjust salt in the mushroom tikka masala and garnish with fresh coriander leaves
