Mawa mishri laddoo
Janmashtami special, mawa mishri laddoo 🥰
Ingredients
• Full cream milk – 1.5l
• Sugar – 3 tbsp
• Cardamom powder – 1 pinch
• Saffron – 1 pinch
• Fresh cream – 3 tbsp
• Mishri (Cube sugar) – 1/4 cup
• Lemon water – Juice of 1 big lemon + 1/2 cup of water
1. Boil 1 litre milk in a pot. Once it comes to a boil, turn off the heat. Gradually add the lemon water (1 tbsp at a time) and mix well. Keep adding lemon water until the milk curdles
2. Once the milk curdles, strain the paneer using a muslin cloth/strainer. Pour cold water onto the paneer. Squeeze the muslin cloth gently to remove excess water from the paneer. Transfer to a plate
3. Mash the paneer to get a very smooth chenna. You can also grate the paneer and knead it using your palms to get a smooth chenna
4. In a non stick pan, boil 1/2 litre milk and heat on low flame until it reduces to half of its quantity. Add sugar and mix well. Reduce the milk further on high heat stirring continuously (may take another 10 minutes)
5. Add the chenna to milk and mix well. Cook on high heat for a minute stirring continuously. Add fresh cream, cardamom powder, saffron and mix well. Cook on high heat stirring continuously until the mixture starts to gather in the pan
6. Let the mawa mixture cool down completely at room temperature. Add mishri and mix well. Divide the mixture into 12 equal portions. Grease your palms with some ghee and roll into round laddoo
