Lauki kheer

Lauki kheer with dry fruits, topped with kesar and dry fruit flakes. What’s a better way to eat this incredibly nutritious bottle gourd?

Recipe

Ingredients
• Full cream milk – 1l
• Ghee – 1 tbsp
• Lauki – 1 cup
• Sugar – 1/3 cup
• Cashew – 1 tbsp
• Almond – 1 tbsp
• Raisin – 1 tbsp
• Pistachio – 1 tbsp


1. Peel the lauki and remove its seeds. Grate the lauki and drain the excess water present in it

2. Heat milk in a pan and boil it until it is two third

3. Heat ghee in another pan and roast the grated lauki for 10 minutes on low to medium heat

4. Add the roasted lauki to the milk and boil it. Once the milk comes to a boil and thickens, add sugar

5. Thinly slice the dry fruits and add them to the kheer. Let the kheer come to a boil and take it off heat

Garnish your lauki kheer with some dry fruit flakes and enjoy this healthy delicious home made kheer!
