Lauki ke muthiye

Great way of incorporating bottle gourd in the diet. That too with a tasty twist! 😋

Ingredients
• Grated lauki – 1.5 cup
• Aata (Wheat flour) – 1/2 cup
• Besan – 1/2 cup
• Rice flour – 1/2 cup
• Rawa (Semolina) – 1/2 cup
• Fennel seeds – 1 tsp
• Coriander seeds – 2 tsp
• Carrom seeds – 1 tsp
• Ginger garlic paste – 1 tsp
• Heeng (Asafoetida) – 1 pinch
• Turmeric powder – 3/4 tsp
• Red chilli powder – 1.25 tsp
• Garam masala – 1 tsp
• Sugar – 2 tsp
• Fresh lemon juice – 2 tsp
• Salt – To taste
• Oil – 3 tsp (If available, add oil from any pickle)
For tempering
• Oil – 2 tbsp
• Mustard seeds – 1 tsp
• Sesame seeds – 2 tsp
• Curry leaves (Optional)

1. Remove excess water from the grated bottle gourd and keep the water aside. Add aata, besan, rice flour, rawa

2. Add all the seeds, dry spices, sugar, salt, heeng, ginger garlic paste, lemon juice and knead into a soft dough. Add oil to get a smooth soft dough

3. Divide the dough into 7 equal portions. Grease your hands with some oil and roll each portion into cylinders (about 2 inches thick)

4. Grease with some more oil so that they don’t stick to each other in the strainer. Grease a strainer with oil. Place the rolled cylinders into this

5. Boil water in a big pot and place the strainer on it to steam the muthiye. Steam for 10 minutes on high heat and then for 10 minutes of low flame

Alternatively, you can also steam in an idli maker or any other utensils you might have

6. Let the muthiye cool down at room temperature and once they cool down, cut them into bite size pieces

7. For the tempering, heat oil in a kadhai. Add some green chillies and sautee. Add mustard seeds and let them crackle. Add sesame seeds and roast them

8. Add the steamed muthiya and mix well. Cook for 7-10 minutes on medium flame until they turn slightly crispy and golden brown
