Kadhai paneer

Sort your dinner scene with this kadhai paneer!

Recipe

Ingredients
• Oil – 2 tbsp + 1 tsp
• Butter – 1 tsp
• Diced paneer – 300 gm
• Garlic cloves – 14 medium
• Green chilli – 1 big
• Roughly chopped onions – 4 medium
• Roughly chopped tomatoes – 3 medium
• Diced capsicum – 1 small
• Diced red bell pepper – 1 small
• Diced yellow bell pepper – 1 small
• Diced onion – 1 medium
• Turmeric powder – 1/2 tsp
• Kashmiri red chilli powder – 1 tsp
• Red chilli powder – 1 tsp
• Coarsely grinded coriander seeds – 1 tbsp
• Coriander powder – 1.5 tsp
• Roasted cumin powder – 1.5 tsp
• Garam masala – 1 tsp
• Sugar – 1/2 tsp
• Salt – To taste
• Fresh cream – 2 tbsp
• Fresh coriander leaves

1. Heat oil in a kadhai. Add garlic cloves, green chillies and sauté them on low flame for about 2 minutes

2. Add onions and sauté until they are brown. Add tomatoes and cook until they are soft and pulpy. Turn off the heat and let the mixture cool down at room temperature

3. Transfer this to a mixer and blend to make a paste. Add 1/4 cup of water and blend to get a smooth puree

4. Heat 1 tsp oil in the kadhai and pour the onion tomato puree into it. Add the coriander seeds, dry spices, salt, sugar and cook the mixture on low flame until the oil separates

5. Heat butter in a pan. Add the diced onions and capsicum to this and sauté for 5-7 minutes

6. Once the vegetables are sautéed, add them to the onion tomato gravy along with the paneer and mix well

7. Add water if required and cover cook for 10 minutes on low to medium flame. Add fresh cream and mix well

Garnish your kadhai paneer with some kasuri methi and serve hot with naan/paratha of your choice! 😋
