Gajar ka halwa

Welcome winters with this mouth watering carrot halwa!

Recipe

Ingredients
• Ghee – 1.5 tbsp
• Grated carrots – 1 kg
• Full cream milk – 200 ml
• Sugar – 1/2 cup
• Chopped cashews & almonds – 1/4 cup
• Raisins – 2 tbsp
• Cardamom powder – 2 to 3 pinch

1. Heat ghee in a heavy bottom pan. Add grated carrots and mix well. Cook them on low to medium heat for about 25-30 minutes stirring occasionally

2. Add milk and mix well. Cover cook on medium heat stirring occasionally until the carrots are cooked (and the milk is completely incorporated into the carrots). Generally would take around 15-20 minutes

3. Add sugar, chopped dry fruits and cardamom powder. Mix well and cover cook on medium heat for about 15-20 minutes

4. Cook on high heat for about 1-2 minutes stirring continuously until the halwa starts to gather in the pan

Your rich, vibrant gajar halwa is ready to serve. Garnish with some more dry fruits and enjoy your winter evenings!
