Recipe
Ingredients
• Milk – 2l
• Curd – 2 tsp
• Sugar – 1/3 cup
• Cashew flakes – 2 tbsp
• Almond flakes – 2 tbsp
• Pistachio flakes – 2 tbsp
• Raisins – 1 tbsp
• Ghee – For greasing
1. Grease a heavy bottom pan with some ghee and boil milk in it
2. Once the milk comes to a boil, add the curd gradually in batches (1/2 tsp at a time) and mix slowly. Stir occasionally and keep collecting the malai on one side
3. Let the rabdi boil on medium heat until it reduces to less than 1/2 of its quantity. Add sugar and mix well
4. Cook again on medium heat until the rabdi comes to a boil. Turn off the heat and add dry fruit flakes
Let the rabdi cool down at room temperature and garnish with some more dry fruits of your choice! 😁
