Desi macaroni

Street style desi macaroni made with whole wheat & 100% suji macaroni. Tasty bhi health bhi 😍😋

Recipe

Ingredients
• Whole wheat macaroni – 2 cup
• Oil – 2 tbsp + 2 tbsp
• Cumin seeds – 1/2 tsp
• Finely chopped garlic – 8 to 9
• Finely chopped green chillies – 2
• Finely chopped onion – 2 medium
• Finely chopped tomatoes – 2 medium
• Diced capsicum – 2 medium
• Sweet corn kernels – 1 cup
• Turmeric powder – 1/4 tsp
• Kashmiri red chilli powder – 1 tsp
• Black pepper powder – 1/2 tsp
• Salt – To taste
• Tomato ketchup – 2 tbsp
• Chilli flakes – 1.5 tsp
• Oregano – 1 tsp

1. Boil 8 cups water. Add salt and 2 tbsp oil. Add macaroni and cook for 8-9 minutes or until it is al dente

2. Strain the macaroni (save the macaroni water) and pour some cold water on it to prevent it from cooking any further

3. Heat oil in a kadhai. Add garlic, green chillies and saute for 30 seconds. Add cumin seeds and let them crackle. Add onions and cook until they turn slightly brown

4. Add tomatoes and cook until they’re soft and pulpy. Add the capsicum, corn, mix well and cook for 2-3 minutes. Add dry spices and salt

5. Add tomato ketchup and mix well. Season the vegetables with chilli flakes and oregano. Mix well and cover cook the vegetables for 3-4 minutes

6. Add the boiled macaroni and mix well. Add 1 cup of the saved macaroni water gradually (1/4 cup at a time) and cook on high heat until the macaroni cooks through

Garnish with cheese or your choice of toppings and enjoy with some garlic bread 😋
