Coconut burfi

5 minute microwave coconut burfi! Quick and easy sweet dish which is equally scrumptious 😋

Recipe

Ingredients
• Ghee – 1 tbsp
• Desiccated coconut – 1 cup
• Milk – 3.5 tbsp
• Sugar – 1/4 cup
• Saffron – 1 pinch
• Yellow food color – 2 to 3 drops

1. Soak the saffron in milk and keep aside for 10 minutes

2. In a microwave safe bowl, take ghee and heat in microwave for 30 seconds. Add desiccated coconut, mix well. Cook for 2 minutes on high heat (Stir the mixture after every 30 seconds)

3. Add the saffron milk mixture, sugar and mix well. Finally add food color and mix well. Cook again for 3 minutes on high heat (Stir the mixture after every 1 minute)

4. Grease a mould with some ghee. Pour the barfi mixture evenly. Cool it down and let it set for a couple of hours in the fridge
