Chilli paneer

Recipe

Ingredients
For marination
• Diced paneer – 500gm
• Black pepper – 1/2 tsp
• Kashmiri red chilli powder – 1 tsp
• Salt – To taste
• Corn flour – 2 tbsp
• Water – 1/2 tbsp
• Oil (For deep frying)

For sauce
• Oil – 2 tbsp
• Dried red chillies – 4
• Finely chopped garlic cloves – 8 to 9
• Slit green chillies – 5 to 6
• Diced onion – 2 large
• Diced capsicum – 1 large
• Diced yellow capsicum – 1 medium
• Diced red capsicum – 1 medium
• Salt – To taste
• Sugar – 1 tsp
• Black pepper powder – 1/2 tsp
• Kashmiri red chilli powder – 1 tsp
• Soy sauce – 2.5 tsp
• Ketchup – 3 tsp
• Vinegar – 1 tsp
• Water – 3/4 cup
• Corn flour slurry – 1/2 tbsp corn flour + 1 tbsp water
• Finely chopped spring onion greens – 2 tsp (Optional, for garnish)

1. Take the diced paneer in a big bowl. Add salt, pepper, kashmiri red chilli powder and mix well. Add cornflour and mix well

2. Sprinkle water over the paneer and mix well. Heat oil in a kadhai and deep fry the marinated paneer until it is crispy and golden brown

3. Soak the dried kashmiri red chillies in warm water for 15-20 minutes. Blend the soaked chillies along with 2-3 tbsp of water to a smooth paste

4. Heat oil in a pan. Add garlic, green chillies and sautee for 30 seconds. Add the chilli paste and mix well. Cook this on high heat for a minute stirring continuously

5. Add onions, mix well and cook for 2-3 minutes on high heat. Add the capsicum, salt, sugar, pepper, kashmiri red chilli powder and mix well. Cover cook on low heat for 5 minutes

6. Add the deep fried paneer and mix well. Add soy sauce, ketchup, vinegar and mix well. Add water and simmer for 2-3 minutes

7. Add the cornflour slurry and mix well. Cook on low heat for 5 minutes or until the sauce thickens

Serve hot with fried rice and enjoy! 😋
