Chicken masala

The classic chicken masala never gets old!

Recipe

Ingredients
For marination
• Chicken – 500 gm
• Hung curd – 2 tsp
• Ginger garlic paste – 1 tbsp
• Turmeric powder – 1/2 tsp
• Kashmiri red chilli powder – 2 tsp
• Coriander powder – 1 tsp
• Garam masala – 1/2 tsp
• Salt – To taste
• Oil – 1 tsp
• Mustard oil – 1 tsp

For gravy
• Oil – 2 tbsp
• Cumin seeds – 1 tsp
• Bay leaf – 1
• Cinnamon stick – 1/2 inch
• Cloves – 2
• Black peppercorns – 2
• Finely chopped onions – 2 medium
• Finely chopped tomatoes – 1 large
• Water – 1/2 cup

For marinating the chicken

1. Take hung curd in a bowl. Add ginger garlic paste, mustard oil, vegetable oil and mix well

2. Add all the dry spices, salt and mix well. Rub this marinade gently and evenly on the chicken and let it rest for about half an hour at room temperature

3. Heat 1 tbsp oil in a kadhai and add the marinated chicken to it. Let the chicken cook in the oil for about 15-20 minutes

For the gravy

1. Heat oil in a kadhai. Add cumin seeds and let them crackle. Add all the whole spices and cook for 30 seconds

2. Add the onions and cook until they are slightly brown. Add the tomatoes and cook until they are soft and pulpy

3. Add the marinated, sautéed chicken to the onion tomato mixture and mix well. Cook the chicken for 10 minutes and add water

4. Adjust the salt and cook until the consistency of the gravy is semi thick

Garnish with fresh coriander leaves, mint leaves and serve your hot and yummy chicken masala with paratha/naan/rice as per your preferences! 🍗🥘🍛
