Beet root carrot and tomato soup

Recipe

Ingredients
• Beetroot – 1 medium
• Carrot – 2 medium
• Tomato – 3 medium
• Onion – 1 medium
• Green chilies – 2
• Garlic Cloves – 3 to 4 small
• Salt – To taste
• Butter – 1.5 tbsp
• Water – 1 cup + 1 cup
• Black pepper powder – 1 tsp
• Fresh Cream – 2 tbsp

1. Peel and dice the carrots, beet root and onion. Dice the tomatoes and roughly chop garlic and green chillies

2. Add the diced vegetables, garlic and chillies to a pressure cooker. Put it on a stove and sautée the vegetables on medium heat for 5-7 minutes

3. Add water (1 cup), salt and close the lid. Pressure cook the vegetables on high flame for 3 whistles. Cook for another 2 whistles on low flame

4. Once the pressure cooker completely cools down on its own, remove its lid and let the vegetables cool down. Transfer to a mixer and grind the vegetables to a paste

5. Strain the paste through a seive in order to get a smooth puree. Make sure there are no lumps

6. Heat butter in a kadhai. Add the vegetable puree and let it boil. Add pepper and mix well. Add water to get the consistency of the soup according to your preference (I added 1 cup of water)

7. Adjust the salt and finally add some fresh cream, mix well. Let the soup come to a boil and take it off the heat
