Aloo pyaaz kachori

What’s better than some crispy scrumptious kachoris for an evening snack? Have a look at these aloo pyaaz kachoris! 🔥

Recipe

Ingredients
For dough
• Maida – 1.5 cup
• Salt – To taste
• Oil – 1/3 cup
• Water – 3/4 cup (1 cup ~ 240 ml)
For stuffing
• Oil – 1.5 tbsp
• Asafoetida (Hing) – 1/4 tsp
• Cumin seeds – 1 tsp
• Coarsely ground coriander seeds – 1 tbsp
• Coarsely ground fennel seeds – 1 tbsp
• Grated ginger – 1 tbsp
• Finely chopped green chilies – 2 tsp
• Finely chopped onions – 2 to 3 medium
• Turmeric powder – 1/2 tsp
• Red chili powder – 1 tbsp
• Coriander powder – 1 tbsp
• Roasted cumin powder – 1/2 tsp
• Black pepper powder – 1 tsp
• Raw mango powder – 1.5 tsp
• Sugar – 1 tsp
• Salt – To taste
• Besan – 1 tbsp
• Boiled and mashed potatoes – 3 large
• Fresh coriander leaves

For making kachori dough

1. Sieve together maida and salt. Add ghee and mix so that the ghee incorporates very well into the maida

2. Add water in batches (1/4 cup at a time) as required and knead a soft dough. Make sure that the dough is not too tight. Cover with a damp cloth and rest for 1.5 hours

For making kachori stuffing

1. Heat oil in a kadhai. Add hing, jeera, coriander seeds, fennel seeds, ginger and saute well. Add green chilies and cook for another minute

2. Add onions and mix well. Once the onions turn brown, add all the dry spices & sugar and cook for 3-4 minutes. Add besan and cook for another 2 minutes

3. Add the mashed potatoes and mix well. Add salt, stir and cook for 5-7 minutes

4. Add fresh coriander leaves and let the stuffing cool down. Shape the stuffing into equal-sized balls

For making kachori

1. After resting the dough, knead it again until it is smooth and divide it into equal-sized balls

2. Flatten the dough and form a cup-like shape. Keep the center of the cup thick

3. Fill the cup with a ball of stuffing and cover it by sealing the sides together. Flatten the stuffed ball to form the shape of kachori

4. Fry the kachori on low-medium heat for 12-15 minutes or until they are crispy and brown
