Fried veg cheese momos

Ingredients
For cover
• Maida – 1.5 cup
• Salt – To taste
• Water – 1/2 cup
• Oil – 1.5 tsp
For filling
• Oil – 1.5 tbsp
• Finely chopped garlic – 6 to 7
• Finely chopped ginger – 1 inch
• Finely chopped green chillies – 3 medium
• Finely chopped cabbage – 1/2 cup
• Finely chopped carrot – 2 medium
• Finely chopped onion – 2 medium
• Chilli flakes – 1 tsp
• Oregano – 1 tsp
• Black pepper – 1/2 tsp
• Salt – To taste
• Diced cheese cubes – 3
For the dough
1. Seive the maida, add salt and mix well. Add water gradually and knead into a semi soft dough
2. Add oil and knead for another minute. Set the dough aside, cover with a damp cloth and let it rest for 15-20 minutes
For the stuffing
1. Heat oil in a pan. Add ginger, garlic and sautee until they’re golden brown. Add green chillies and cook for 30 seconds
2. Add onions and cook for 2-3 minutes until they’re translucent. Add the carrots and cabbage, mix well. Cook the vegetables for 2 minutes on high heat stirring continuously
3. Add chili flakes, oregano, black pepper and salt. Mix well and cook on high heat for a minute stirring continuously. Turn off heat and transfer the stuffing to a bowl. Let this cool down at room temperature
For the momos
1. Roll the dough into very thin roti and cut out circles of desired size. Make sure they’re not too small or else the stuffing might come out
2. Keep the stuffing in the centre of the cut out and place cheese on it. Fold to close the momo and press strongly to seal it very well
3. Heat oil in a kadhai. Fry the momos on medium heat for 3-4 minutes or until they turn crispy and golden brown
Serve hot with mayonnaise and schezwan sauce or any sides of your choice! 😋
