Ingredients
For marination
β’ Diced boneless chicken (thigh/breast) – 500gm
β’ Ginger garlic paste – 3 tsp
β’ Vinegar – 1.25 tsp
β’ Oil – 3 tbsp
β’ Black pepper – 2.5 tsp
β’ Red chilli powder – 1 tsp
β’ Salt – To taste
β’ Corn flour – 4.5 tbsp
β’ Maida – 3 tbsp
β’ Oil (For deep frying)
For sauce
β’ Oil – 2 tbsp
β’ Finely chopped garlic cloves – 8 to 9
β’ Finely chopped ginger – 2 inch
β’ Slit green chillies – 4 to 5
β’ Diced onion – 2 medium
β’ Diced capsicum – 2 small
β’ Soya sauce – 2 tbsp
β’ Chilli sauce – 2.5 tsp
β’ Ketchup – 3 tsp
β’ Vinegar – 1.25 tsp
β’ Water – 3/4 cup
β’ Salt – To taste
β’ Sugar – 1.25 tsp
β’ Black pepper powder – 1.5 tsp
β’ Red chilli powder – 1.5 tsp
β’ Corn flour – 1 tbsp
β’ Roasted sesame seeds – 1 tsp (Optional, for garnish)
β’ Finely chopped spring onion greens – 2 tsp (Optional, for garnish)
For marinating the chicken
1. In a bowl, mix together ginger garlic paste, vinegar and oil. Add chili powder, pepper and salt and mix well. Add chicken and mix well
2. Seive together cornflour and maida, fold the marinated chicken into this. Make sure all the chicken pieces are evenly coated
3. Marinate this chicken at room temperature for about 1-1.5 hours
4. Heat oil in a wok and deep fry the marinated chicken on medium flame for 3-4 minutes or until it is golden brown
For the sauce
1. Heat oil in a pan. Add ginger, garlic and sautΓ© them well for about a minute. Add green chillies and cook them for another minute
2. Add onion, capsicum and mix well. Let them cook for 4-5 minutes. Add soya sauce, red chilli sauce, tomato ketchup, vinegar and mix well
3. Add water, simmer and let the sauces cook down for 3-4 minutes. Add sugar, salt, pepper, red chilli powder and mix well
4. In a bowl, take cornflour and add 2 tbsp water to it, mix well to form a paste
5. Add the cornflour paste to the sauce and mix well. Cook the sauce for a few minutes to get a thick consistency
6. Add the fried chicken to the sauce and toss it well so that the sauce entirely coats the chicken. Cook for two minutes so that the chicken absorbs the flavors of the sauce
Garnish with finely chopped spring onion greens and some roasted sesame seeds. Your hot and spicy chili chicken is ready to eat! πΆπ
